Leek Croquettes

  • 4 fresh leeks
  • 250g ground beef
  • 2 eggs
  • 1 tbsp dry breadcrumbs

  • Oil, for frying
  • Fresh lemon wedges, to serve

Clean the green leeks properly and remove the base and most of the green stalk. Cut in half longways then into 1.5-centimeter slices. Put in a large skillet and submerge with water, then heat over a medium heat for about 20 mins or until softened.

Remove the water from the leeks and transfer in a mixing bowl with the ground beef, eggs, breadcrumbs, dill, flat-leaf parsley and sweet paprika and season liberally with pepper and salt. Combine completely using your hands then shape a several tablespoonfuls into a patty, pressing a bit. Put on a platter and proceed for the remaining of the preparation.

When using leafy greens, clean it thoroughly, removing any tough stems, and roughly chop it into large chunks. Place in a deep pan with a small amount water over a medium flame. Once softened, drain in a strainer for about 15 mins, then squeeze out any remaining moisture and reserve.

When working with defrosted spinach, carefully press out excess liquid.

Heat the olive oil in a frying pan over a moderate heat and cook the diced onion and garlic cloves until softened, about four minutes. Remove from the heat.

Place the cooked spinach, sauteed onion and sauteed garlic, hard cheese, ricotta, nutmeg, paprika, breading and eggs in a big mixing bowl and season with pepper and salt. Stir completely until incorporated. If the preparation appears too loose, incorporate some extra breading.

By hand, mold the mixture into elongated patties slightly larger than a walnut but smaller than an egg, and put them on a plate lined with baking paper. Cover and refrigerate for at least 60 minutes.
